Christmas Day Darlings

Everyone needs some good Holiday movies to keep them going throughout the season. I'm lucky that my mother is a semi hoarder and keeps a room full of vhs tapes from 30 years ago. Because of this, I have a goldmine of old flicks to watch. Don't be too jealous though, you forget about the rewind time and picture quality from a piece of treated plastic that's been sitting in stacks for decades. Two very important factors that add to the enjoyment of watching "the classic flicks". Regardless, I can't think of anything else I want to do today except for start a woodfire, sip on champagne in my new pj's and surround myself with stacks of vhs.... Hope that you're having a Merry Christmas and if you get the chance, try to sit down and enjoy a classic and some good company.

Grilled Cheese Tips for Keller

Jo's Tips On Gourmet Grilled Cheese
(I can't believe this is what I'm doing on Christmas Eve)

Top Cheese Choices: Gouda, mozza, brie, jarlsberg, swiss and if you want to do traditional an old age cheddar or standard cheddar is delicious. Really any kind will work and each sandwich is meant to reflect a mood, feed a craving or be a flavour adventure.

Favourites:

#1 Combine sundried tomatoes, sauteed spinach, a drizzle of honey and jalapeno paste.

#2 Sweet Hot Mustard with Jarlsberg on rye bread.

#3 Goat Cheese, tomato, and romano with carmelized onions.

Notes:

- A great way to stimulate the palette, is to mix hot with sweet or sweet with salty. etc. don't be afraid to test out new ingredients.

- For the meat eaters simply add in nicely cooked turkey or thinly sliced chorizo sausage.

- Caramelized onions are a great add on to any sandwich.

- Always compliment your grilled cheese with a crunchy cut up dill pickle. Trust me. Friends respect that shit.

- If ever there was a time that cream cheese is acceptable. It's meant to be on a cooked sandwich. Herb and Garlic will not disappoint.

- Use pesto whenever and wherever you are able. Or make a aioli using one part mayo one part pesto to serve on the side.

Goodnight World

This has been one of the best weeks of my life thus far, for so many reasons. Evening Hymns has accompanied me through the best and the even better best of it.
